After watching a few too many episodes of Guy’s Grocery Games, I was in a cooking mood last weekend. Luckily, I was heading to a friend’s house for game night. I may love to play hostess, but I also love to attend other people’s parties – less clean up for me. Since I wanted to bring something we could all enjoy, I scoured Pinterest to choose a dish based on the food I already had. Per usual, I had a bunch of cheese + some bacon. Enter the Cheesy Bacon Spinach Dip.
This dip is as delicious as it sounds. It’s also super simple to make. It’s a great addition to any game night, Super Bowl party or even work potluck. The beauty of Cheesy Bacon Spinach dip is that the spinach tricks you into thinking it’s healthy while the cream cheese tells you it’s not. Whether you plan to serve it to friends or eat it while taking a trip into Shonda land, you’ll love this dip.
You can absolutely choose to saute the spinach; I don’t. The most important aspect of this dish is not the ingredients themselves, but the tools you use. I cannot stress enough the importance of a good hand mixer. It is a life (arm) saver when making dips like this. A cohesive blend of all the ingredients is crucial for a pleasant eating experience.
As far as eating the dip, you can choose the old school route of tortilla chips, but I prefer Tollhouse Sea Salt Pita Crackers. If you have an extra dip + you want to reheat in your oven instead of the microwave, bake at 200º for 10-15 minutes + add a little more shredded cheese to the top.
Cheesy Bacon Spinach Dip
Whether a game night or tailgate, this Cheesy Bacon Spinach Dip is simple to make but delicious enough for everyone to enjoy.
- 12 slices Bacon
- 8 ounces Baby Spinach
- 8 ounces Sour Cream
- 16 ounces Cream Cheese
- 2 cups Cheddar Cheese shredded
- 1 cup Mozzarella shredded
- 2 tbsp Mayo
- 1 tbsp Minced Garlic
Preheat oven to 400º + place bacon on foil-lined trays. Bake for 15 minutes or until crispy.
Let bacon cool + de-grease. Turn oven down to 350º.
Mix softened cream cheese with mayo, garlic, and sour cream.
Chop bacon and fold into mixture.
Slowly add in 1.5 cups of cheddar and mozzarella.
Put mixture into corning ware or casserole dish and cook for 15-20 minutes.
Sprinkle remaining cheddar cheese on top of the dip and bake for another 5-10 minutes. Serve warm.
