If you know anything about me, you know how much I love carbs. Chickfila was a weekly staple + I was never one to turn down a cheese spud from McAlisters. But, I recently started the Keto diet which means no carbs for me. In fact, I’ve only been having around 28 grams of carbs a day (a banana is 27 grams for your reference). Overall, Keto has been a pretty good experience except I find myself really missing carbs, namely pizza + chips. After a few days of craving some za, I decided to take action. I couldn’t have pizza but I could find a substitute.
My favorite cauliflower-crust pizza recipe had too many carbs, so it was out. But that got me thinking: cauliflower cheesy bread! With a little homemade marinara, it was very reminiscent of pizza + hit the spot perfectly. With only a few simple ingredients you can have some, too.
Cheesy Cauliflower Bread
A low carb diet doesn't mean you have to deprive yourself of things you love. This cheesy bread is the perfect substitute for breadsticks or pizza. In less than 45 minutes you can have Keto-friendly comfort food.
- 2 cups of cauliflower
- 2 large eggs
- 1 cup of mozzarella
- 1 cup of parmesan
- 1 tbsp of minced garlic
- 2 tsp of basil
- 2 tsp of oregano
Rice cauliflower in food processor until small. You can also buy cauliflower already riced. I prefer to use cauliflower pearls, but you can chop up a head of cauliflower as well.
Once it's riced, microwave cauliflower for 5 minutes. Allow to cool for an additional 5 minutes.
Place cauliflower in cheesecloth or kitchen towel. Squeeze out water. There will be more water than you actually think possible so keep squeezing. The dryer the cauliflower the better your dish will turn out.
Mix together cauliflower, beaten eggs, parmesan, and spices. Place in 6 cup Pyrex dish (6.75 x 8.75).
Preheat oven to 450 and bake mixture for 10-15 minutes. Then top with mozzarella + bake for 5 more minutes or until cheese is melted.
Allow to cool + slice with pizza cutter.
At 400 calories a serving this low carb meal is great for anyone. For those on Keto, the macros are 21.8g fat, 14.4g carbs, 37.4g protein. Serve with homemade marinara for the perfect pizza fake. Simmer together 1 cup of tomato sauce, 1 tbsp of garlic, 2 tsp of basil, 1 tsp oregano, 1 tbsp of olive oil, and one crushed tomato (3g fat, 5g carbs, 1g protein). It makes 8 servings.
