It is getting chilly outside + that can only mean one thing, soup + chili are back in season. Nothing tastes better to me on a crisp fall day than a warm bowl of chicken chili. Rich + hearty, this dish is great for nights at home with the family, watching the big game, or cuddling up on the couch on a rainy night. Made with basic ingredients you likely have in your pantry, chili is a breeze to make + perfect for people with any level of spice palate.
I am not a big fan of spice. Despite living in Texas, I never mastered that love or even tolerance of spicy food. Luckily, with this chicken chili recipe, you get to choose your own spice adventure. The recipe below uses minimal spice but lets you know where you can add chili powder, hot sauce, or other spices you may want to add a little extra heat to your chili.
Speaking of extras, chicken chili isn’t complete without it! I add a few different things to complete my chili dish. For richness, I add sour cream as well as cheddar cheese. I also add in Fritos for a little crunch.Other things you can add include bacon, oyster crackers, peppers, cilantro, sweet potatoes, and onion. Chicken chili is one of those great dishes you can make all your own with a few little additions. To get a good base, follow the instructions below.
Bring Your Own Spice Chicken Chili
This warm, hearty chili is perfect for a chilly or rainy day. Made with almost no spices, this recipe is perfect for the spice-averse or those who prefer to spice things up their own way.
- 1 tbsp olive oil
- 1 tsp garlic salt
- 2 cans drained kidney beans (light or dark)
- 1 can drained black beans
- 2 cans drained petite diced tomatoes
- 2 cans tomato sauce
- 2 tbsp minced garlic
- 12 oz ground chicken
Brown chicken in a pan with olive oil and garlic salt (add other spices if desired).
While chicken cooks, pour tomato sauce into a pot with garlic and let simmer for 2 minutes. Add chili powder or other spices/ hot sauces if desired.
Drain beans and diced tomatoes then add to tomato sauce.
Add meat to pot and allow to simmer for at least five minutes.
Serve with sour cream, cheese, and Fritos.
