Cheesy Cauliflower Bread

A low carb diet doesn't mean you have to deprive yourself of things you love. This cheesy bread is the perfect substitute for breadsticks or pizza. In less than 45 minutes you can have Keto-friendly comfort food.

  • 2 cups of cauliflower
  • 2 large eggs
  • 1 cup of mozzarella
  • 1 cup of parmesan
  • 1 tbsp of minced garlic
  • 2 tsp of basil
  • 2 tsp of oregano


  1. Rice cauliflower in food processor until small. You can also buy cauliflower already riced. I prefer to use cauliflower pearls, but you can chop up a head of cauliflower as well.
  2. Once it's riced, microwave cauliflower for 5 minutes. Allow to cool for an additional 5 minutes.
  3. Place cauliflower in cheesecloth or kitchen towel. Squeeze out water. There will be more water than you actually think possible so keep squeezing. The dryer the cauliflower the better your dish will turn out.
  4. Mix together cauliflower, beaten eggs, parmesan, and spices. Place in 6 cup Pyrex dish (6.75  x 8.75).
  5. Preheat oven to 450 and bake mixture for 10-15 minutes. Then top with mozzarella + bake for 5 more minutes or until cheese is melted.

  6. Allow to cool + slice with pizza cutter.
