I’m a little ashamed to admit it, but it wasn’t until I was 26 years old that I started eating chicken salad. I know what you’re thinking… I’m from the south. I should love chicken salad. And I do, now. I’ve always found the concept of chicken salad to be weird + off-putting. That’s why when my family wanted to dine at Chicken Salad Chick, I was not thrilled. But then, I had the Sassy Scotty chicken salad + my world was forever changed.
The Sassy Scotty chicken salad is ranch-flavored and featured cheese, bacon, and other goodies. I choose it from the menu because it seemed the most like my beloved cheeseball. It had so much flavor yet was creamy + delicious. While I wouldn’t say it’s the healthiest option out there, it is keto-friendly! It has some substitutions you can make if you aren’t on keto to make it a little less fatty + healthier. I’ll lay those out in the recipe below.
One of the things I love the most about Sassy Scotty chicken salad is its versatility. You can eat it with crackers, on a salad, or even just plain! I’ve enjoyed buying spinach wraps + taking it for lunches at work. It gives me a dose of protein + comfort while also giving me some veggies. It stays really well so if I make it on Monday, it is still good on Friday (assuming the ingredients you used also had good expiration dates.
While I love the Chicken Salad Chick, it was not financially feasible for me to buy 5 days worth of chicken salad a week. Luckily, I was able to recreate the recipe from things I already had in my kitchen which made it much more affordable. The only thing I needed to rebuy on a weekly basis was the chicken itself. One package of ranch dip will last four recipes – or you can make your own ranch with spices in your cabinet. Altogether, I spend less than $10 on ingredients, including the wraps.
Sassy Scotty Chicken Salad Ingredients 
- Shredded rotisserie chicken (I buy it pre-shredded or you can even make your own)
- 1/2 cup of sharp cheddar
- 5 strips of bacon chopped + dried (or 1/4 cup of real bacon bits)
- 1/2 cup of Miracle Whip
- 2 tbsp of sour cream
- 3 tbsp of ranch dip powder
- 1 tsp of salt
- Optional: 1/4 cup of celery, 1/4 cup of green onions, pepper to taste, 1 tbs paprika for kick,
If you want to make this meal a little healthier, use light sour cream + Miracle Whip. I honestly can’t tell a real difference.
Instructions
- Shred chicken.
- Combine the Miracle Whip, sour cream, and ranch dip into a bowl. Combine well to make a dressing.
- In a separate bowl, add all other ingredients + mix together.
- Add dressing to chicken mixture.
- Serve or store in air-tight to eat later.
And that’s it! Now you have a Sassy Scotty chicken salad copy cat. It’s really that easy. You mom has probably been making chicken salad for years + you didn’t even know it could taste so interesting.
If you want to make your own ranch, combine 1 tsp dried parsley, 1/2 tsp dill, 1/4 tsp onion powder, 1/2 tsp garlic powder, 1/4 tsp pepper, and 1 salt. Violá!
